Domaine Giboulot Wine
The domaine comprises 12 hectares divided between several parcels within the single appellation. Of Savigny Les Beaune. The vineyards are all managed by lutte raisonnee and no chemical herbicides are employed. The youngest vines are trained in the Royat method, which helps control the vigour of the young vine. The others are trained to the Guyot. All the vineyards are planted with the Pinot Noir Fin. Jean-Michel produces two village Savignys, one from several parcels and the lieu-dit, Aux Grands Liards. The other red wines listed are all from Jean-Michel's Premier Cru vineyards - Narbantons, Aux Gravains and Serpentieres. The Narbantons is always more open and fruit driven, the Aux Gravains has an extra complexity and meaty minerality and the more backward Serpentieres with its distinct minerality and greater potential for longevity.
Giboulot’s white Savigny has also become a favourite of mine, offering a superb flinty minerality akin to a fine Chablis.
