Domaine Gachot-Monot Wine
Founded in 1890, the domaine comprises 12 ha. Damien has been changing the way in which the vineyards are worked over recent years, aiming to treat them as naturally as possible, working the soil etc. The grapes are all de-stemmed and as with all the best wine makers, he prefers to let the vinification take its course and not to over work the wines. He aims for a good maturity of fruit and prefers to put the grapes into the vat without pumping. In general the juice is pumped over but the cap is not punched down. He explains that the vineyards of Corgoloin give the wine a good intrinsic structure and he has no need to try to increase this. Indeed, whilst all the wines benefit from a good concentration they also possess a fine balance and finesse. The new oak is kept to a minimum with around 20% for the Cotes de Nuits Villages and 30 % in the three Nuits St. Georges. The wines are bottled without filtration.
